A Chardonnay white wine with an excellent straw-yellow colour and sharp varietal aromas. Smooth, sweet and rounded on the palate with well-balanced acidity.
CLIMATOLOGICAL DATA OF THE YEAR
The weather this year was characterised by steady rainfall throughout the lifecycle of the vine. Ripening slightly later than the previous year was a sign that the harvest would also be later. Analysing and tasting the grapes were determining factors in deciding, plot by plot, the exact day of harvesting.
Harvest selected using inert gas. Pre-fermentative maceration at 8ºC for 24 hours (juice and skins) in an CO2 inertised tank before being cold pressed. Fermented with selected yeast at 17ºC for 16 days.
Excellent straw-yellow colour. Sharp Chardonnay varietal aromas with a smooth, sweet and rounded palate with well-balanced acidity. The retronasal aromas include white flowers, certain citric notes (orange and grapefruit peel) and tropical fruit (passionfruit and mango) and an endnote of freshly-cut hay. This is an inimitable homegrown wine with a wide range of aromas that deserves to be tasted slowly, at a temperature of 5-7ºC.
